MEAL PLANNING MONDAY // MAY 8


I'm back for a mother Meal Planning Monday! Peter and I really locked in our nutrition and calories last week and are feeling so good. I have several recipes I'll be sharing here this week including our much requested Bruschetta Chicken recipe which will be here on my blog on Wednesday morning, so come back!

Meal Planning vs. The Grocery Store Scramble

Welcome! We are diving back into another Simply Fit posts topic. We've slowly been diving into small simple steps that can build on each other to make some great healthy progress. I need little attainable goals to build on if I'm going to stay consistent. How about you?

This meal planning step is a make it or break it factor for me. It truly is a time saver on so many levels and takes me just a few minutes when I am set up correctly. Meal planning does not need to be overwhelming. 

Why Meal Plan?


Save Money:


Meal planning is something I have started and stopped again and again over the years. Making a plan for what your family will eat over the week allows you to know exactly what to buy from the grocery store. Stick to that list and you'll most likely save money on groceries! 

Eat Healthy:

If I walk into our local Walmart, Safeway, or even Costco without a plan of what we need, the scramble begins. On the spot I try to remember what is empty in our cupboards. I start to panic on what to make for dinner for the next couple of days and before I know it I'm throwing the easy and usually unhealthy options into my cart!

How to Meal Plan?


I have two tried and true methods I have used over the years to meal plan. Honestly I bounce around between the two. Both methods make the time it takes to meal plan super easy and quick!

Plan to Eat:


I can't rave enough about Plan to Eat. If you find most of your recipes are from other blogs and websites, this is totally the way to go. When I see a recipe I like, all it takes is a click of the mouse and that recipe is magically sucked into my Plan to Eat digital "recipe box." 

Since all the recipes I want to make that I've seen online are already in my digital recipe box all it takes is sitting down to the Plan to Eat website to start meal planning. Open up the calendar, drag and drop meals, and THAT'S IT! Click the Shopping List button, print your list, and head to the store. 

With this option I can meal plan in literally less than 5 minutes.

Fill your digital recipe box with those healthy recipes you love or want to try and you're going to plan quickly + stay on track with those health and fitness goals. Simply Fit in action!

Printed Month of Meals:


This method will take maybe an hour of your time but once it's set up - that's it. Done. 

I sat down with my favorite cookbooks and opened a spreadsheet on my computer. I made a grid with 7 columns and 4 rows. Fill each square with a recipe including the page of the cookbook it can be found on and you suddenly have 4 WEEKS of meals done and planned! 

Sunday afternoons I typically sit down, look at what week I'm on and simply make the grocery list. Again - once that initial step is done, my meals are planned and grocery list is done in 5 minutes or less. 


Try one of these methods - I think you'll be glad you did! I find I'm MUCH more less likely to cheat and eat an unhealthy meal or buy a bunch of junk food when I've planned ahead. Give it a try!

menu planner ~ 2014

I'm so excited to show you what I made this weekend!  My sweet cousin has a fun blog (you should check it out!) and I was so inspired by a recent post she wrote about how she meal plans.  Between working part time, multiple therapy visits a week, caring for Grandma, plus my role as wife, mom, and homemaker, I desperately have to plan our meals ahead of time.  If I don't it's 5:30 before I know it, nothing is made, and I'm ordering pizza. Yuck.  I've tried so many systems, pinned numerous recipes on Pinterest, organized again and again, but nothing really works.  Until now.  As fun as it is to find new recipes on Pinterest, I don't have time to sift through the hundreds of amazing looking recipes filed on my pinterest boards.  I need easily accessible and practical recipes for my family in this season of life. Enter my cousin's method.  I took her advice, picked 35 meals, and assembled my meal planning binder complete with printed recipes. I love it!


You can read about what's involved and how I learned how to do it here. I ordered my 5 1/2 x 8 1/2 in. binder, page divider tabs, and notebook paper that size all from Amazon.  I love the smaller size.  It's easy to fit in my purse and take with me to the grocery store.  I'm already thinking I want to print and assemble a prayer binder this size as well for my quiet times.

(I'm also super excited that I get to see my cousin - in person - this week!  It's been so long, 8 years or more, since I've seen her!)

Menu Plan - July 23, 2012

Because my husband was in between jobs and pay periods (he has a new job at our church that we are extremely excited about) we had 2 1/2 weeks without a paycheck. OUCH!  We survived, barely, but it was SO NICE to be able to menu plan and actually grocery shop on Friday.  I'd exhausted every option of food in the pantry.  Even all the beans and rice were gone!  I'm still pinching pennies until we get a full 2-week paycheck, but we'll get there.

Here's what we are eating this week.  I found a webpage that had a bunch of good looking slow cooker meals and with the HOT weather I'm happy to try them out and not turn on the oven.  Because of that, several of these links are to the same web page, just scroll down to find it!

Monday - Greek Chicken Pita Folds

Wednesday - Country Style BBQ Ribs (using pork ribs instead of beef because of a great sale!)


Thursday - Grilled Cheeseburger Wraps


Friday - Slow Cooked Kalua Pork (SO excited to try this one - it looks YUMMY!)


Saturday - Tuna Sauce on Rice (Our quick, cheap favorite go-to.  It's simply a white sauce with tuna added, thrown in some lemon pepper and serve over rice)

Sunday - Grilled chicken thighs, corn on the cob, grilled potatoes

That's the plan!  So happy to be back menu planning again. It really takes a certain stress out of the week.  I am SO EXCITED to explore two new cookbooks.  A piano students family gave me both of Pioneer Woman's cookbooks and I am excited to try them out.  Her food is always amazing!  I hope to menu plan from those in the weeks to come.  :)

Menu Plan - May 27, 2012

This has been a great Memorial Day.  We spend the day with some new friends that we have been getting to know.  Super relaxing day.  Now we're home and the reality of a new week is hitting me.  Back to life after an extra long weekend.  This is the first full week of summer break for the kids so menu planning will be a big help as we work into a summer routine.  

Here's what I put on the menu for this week.  I have some clearance meat in the freezer so my goal is to use what I have and not spend much this week.  

Monday: BBQ w/friends.  Taking chips & drinks.
Tuesday: Beef stir fry
Wednesday: Grilled pork chops
Thursday: Steak tacos
Friday: Balsamic/Honey pork sandwiches
Saturday: Spaghetti
Sunday: Tuna on rice

Menu Plan - April 23, 2012

After a couple lazy week of menu planning, I'm feeling the need to get back at my routine again.  Knowing what's on the menu this week and knowing the needed ingredients are in the cupboards makes my days go so much smoother.  SO - I'm back, with a new week or menu plans.

I found a couple new recipe books at the library that I am REALLY excited about, and a few of my recipes this week are from those.  I'll let you know how they turn out - and share the recipe if it's good! :)

Monday: Chicken under a brick, rice, veggies
Tuesday: Herb grilled salmon, mashed potatoes, glazed carrots

Menu Plan April 2, 2012


I love how meal planning makes the day so less stressful.  I have started and stopped the concept of meal planning since I was married 12 years ago.  But maybe it's because of the wealth of recipes online now, I find it fun to plan ahead and have kept with it since the beginning of the year.  If you haven't tried it yet, you should!  Most days at our house require quick kid-friendly meals, but also require spending as little as possible.  Especially if you are on a tight budget like us, hopefully this will help you!

Make sure to read all the way to the end of this post for my shopping list for these meals.
Here's what we are eating this week:


Tuesday: Tuna sauce on rice.  This is our cheap go-to meal.  Make a white sauce seasoned with lemon pepper.  Add 2 cans of tuna.  Serve over white rice.  Cheap, quick, and the entire family loves it.


Thursday: Oriental Beef & Noodle Toss -- Also one of our favorite super cheap and quick go-to recipes.  I teach piano a lot in the afternoons so quick meals are a must after teaching up until dinner time.  












Saturday: Homemade Egg McMuffins -- sausage patties, fried egg, cheese on an english muffin.  Kids love it!

Menu Plan & Shopping List February 20

It's that time again.  I just finished my menu plan and already went shopping!  I love sneaking away on Sunday evenings to shop while my husband is home to watch the kids.

My Daniel turns 4 tomorrow!  So...since it's his choice, he's asking for macaroni and cheese as his birthday dinner.  My family LOVES this new recipe I've been using so they won't mind it two weeks in a row.  I have two recipes I want to share with you later this week!  So be sure to subscribe in the upper right corner.

Here's what's on our menu this week:

Monday: Macaroni and cheese with smoked sausage (NEW recipe - coming this week!)
                Birthday Cake and Ice Cream!!!

Tuesday: Shredded Beef Tacos (NEW recipe - coming this week!)

Wednesday: Spaghetti and meatballs with fresh artisan bread (This is my busiest day of the week so I need quick meals.  I will put frozen meatballs and 2 jars of spaghetti sauce in the crock pot.  That's it!  The artisan bread is made ahead of time and rises while I teach piano all afternoon)

Thursday: Potato and ham soup

Friday: Cream baked taquitos (we had family in town this week and pulled out pizzas so we didn't get to this meal last week)














Saturday: Chicken & pesto tortellini (The recipe calls for pasta but we love to use tortellini instead)

It's that time of the week again.  I didn't get the Jambalaya made this week, so I put it back on the list for this week.  Here's what we are eating this week.

Tuesday: Cauliflower Soup (I'll add shredded chicken to this soup as my husband prefers to always have meat)

Meal Planning Printables

I have come to LOVE meal planning.  I learned how much I loved it this week when I caught the nasty cold that the rest of my family has already had.  I was able to quickly assemble my meals and head back to bed.

Once a week I sit down and plan out a week's worth of meals.  I look at those meals and write on my shopping list page the ingredients I need to get.  Both of those pages then go into a page protector and in my menu/coupon binder.  Since they are in the page protector I can keep it and re-use that plan a month or so later and I already have my shopping list to grab!  I use a dry erase marker on the page protector to cross out items as I shop.   Keep an eye out for a blog tour of this binder, where I will explain more how I use these pages.  In the mean time, here are my meal planning pages that you are welcome use.  I have made available a one week page, a two week page, as well as my shopping list.  Share, print and enjoy!

Menu Plan & Shopping List January 30

Happy Monday!  I love the beginning of a new week.  It's like a fresh start to get on track with the meal planning, housework, & laundry.  I love how meal planning makes the day so much easier & not stressful.  If you haven't tried it yet, you should!  Most days at our house require quick kid-friendly meals.  Make sure you read all the way to the end of this post for my shopping list for these meals!

Here's what we are eating this week:


Tuesday: Tuna sauce on rice -- I'll get a picture up soon.  This is our cheap go-to meal.  Make a white sauce seasoned with lemon pepper.  Add 2 cans of tuna.  Serve over white rice.  Cheap, quick, and the entire family loves it.


Thursday: Asian Beef & Ramen -- Also one of our favorite quick go-to recipes.  I teach piano a lot in the afternoons so quick meals are a must after teaching up until dinner time.  Recipe & Pictures coming later this week!












Saturday: Homemade Egg McMuffins -- sausage patties, fried egg, cheese on an english muffin.  Kids love it!
